Chocolate Making Machine Chocolate Refiner Conche Machine

It is used to refine and conch chocolate pastes — reducing particle size and developing flavor and texture — producing smooth, rich chocolate suitable for further processing or molding.

Models are available in a wide range of capacities from 40 L up to 3000 L to suit small-batch shops through to larger production needs.

The machine is constructed from 304 stainless steel, which is food-grade, durable and corrosion-resistant.

The machine supports 220V and 380V power supplies; specific electrical configuration (single- or three-phase) depends on the chosen model — confirm with the supplier for your model.

The machine can achieve a particle fineness in the range of approximately 20–25 micrometers (µm), producing a smooth mouthfeel appropriate for chocolate.

Typical conching durations are between 7 and 22 hours. Actual time depends on recipe, batch size, desired flavor profile and final texture.

The listed weight is 360 kg; actual weight will vary by model and capacity, so check the specification sheet for the model you choose.

Yes — besides chocolate, refiner/conche machines are often used for nut butters, praline pastes and other cocoa-based or fat-containing pastes. Confirm compatibility for specific products with the manufacturer.

No. The refiner/conche prepares and smooths chocolate paste and develops flavor. Tempering (crystallization control) is a separate step requiring a tempering machine or tempering process.

Because it is made of 304 stainless steel cleaning is straightforward, but thorough cleaning procedures (disassembly, flushing, food-grade cleaners) should follow the user manual. Regular maintenance includes checking seals, bearings and drive components and following the manufacturer's service schedule.

Standard machines typically include protective covers, interlocks and emergency stop functions. Exact safety features vary by model — review the model specification and safety manual for full details.

Higher fat content, larger batches and tougher recipes can require longer refining/conching times to reach the target fineness and flavor. Adjustments to temperature and mixing intensity also affect results.

Throughput depends on model capacity, recipe and processing settings. For accurate kg/hour estimates for your product and model, request production data from the supplier or provide your target batch size and recipe for calculation.
