Production Process:
- Milk Reception: The process begins with milk reception and pre-heating of skim milk to prepare for further processing.
- Fat Separation: Skim milk undergoes fat separation to isolate the cream.
- Cream Pasteurization: The separated cream is pasteurized at a high temperature (95°C or higher) to destroy enzymes and microorganisms, ensuring longer shelf life and better flavor.
- Vacuum Deaeration: If necessary, vacuum deaeration is performed to remove undesirable flavors or aromas (e.g., onion taste).
- Culture Preparation: Culture preparation is added if required for specific flavor profiles.
- Cream Ripening and Sourning: The cream is subjected to temperature control to develop the desired fat structure during cooling.
- Churning/Working: The pasteurized and ripened cream is churned to create butter.
- Butter Milk Collection: The buttermilk is separated and collected.
- Butter Silo and Conveyor: Butter is transferred to a silo via a screw conveyor for further processing.
- Packaging: The final product is packaged for sale.
